Spicy Cucumber Salad
(serves 2-4 as a side dish)
Ingredients:
- 1 English cucumber, diced
- 1/2 tsp garlic chili
- 2 Tbsps white vinegar
- 2 Tbsps soy sauce
- 1 tsp sesame oil
- Salt
Directions:
- Place the cucumbers into a small mixing bowl. Sprinkle with a pinch of salt and let it sit for 10 minutes. After 10 minutes, squeeze out as much of the cucumber juice as possible and return back to the bowl.
- Add garlic chili, vinegar, soy sauce and sesame oil. Toss until well coated.
- Let the cucumbers marinate in the sauce for 15 minutes before serving.
- Serve as a side with rice and another okazu, or alone.
